Apple Preparation: In a bowl, toss the diced apples with 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon. Set aside.
Cinnamon-Sugar Topping: In a separate small bowl, mix the light brown sugar and ground cinnamon. Set this aside as well.
Apple Bread Batter: In a large mixing bowl, cream together the softened butter, sugar, and vanilla extract until smooth and creamy.
Add in the eggs, one at a time, ensuring they are well incorporated. Slowly pour in the milk and mix until combined.
Add the flour, salt, cinnamon, and baking powder and mix until fully combined.
Scrape down the bowl to remove any remaining lumps.
Assembly: Spread half of the batter into the prepared loaf pan. Evenly spread half of the sugared apple mixture over the batter.
Spoon the remaining batter and smooth the top. Top with the remaining sugared apples and sprinkle with the remaining cinnamon-sugar mixture.
Baking: Place the loaf pan in the oven and bake for about 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
