Ingredients

  • 2 cups cottage cheese full-fat or low-fat
  • 2 cups self-raising flour
  • 2 eggs for egg wash

Instructions

  • Preheat the oven to 190°C (375°F). Line a baking tray with parchment paper.
  • Blend the cottage cheese in a food processor or blender until smooth and creamy.
  • Combine with flour: In a mixing bowl, add the self-raising flour to the blended cottage cheese and mix until a sticky dough forms.
  • Rest the dough: Let the dough sit for 2–3 minutes. This allows the flour to absorb moisture and makes it easier to shape.
  • Shape the bagels: With slightly floured hands, divide the dough into equal portions and form each portion into a ball. Then, gently poke a hole in the center of each ball to create the classic bagel shape.
  • Prepare egg wash: Beat the eggs in a small bowl. Brush the top of each bagel with the beaten egg to give a shiny, golden finish.
  • Bake: Place the bagels on the prepared tray and bake in the preheated oven for 20–25 minutes, or until golden brown and cooked through.
  • Cool and serve: Let the bagels cool slightly on a wire rack before serving. Enjoy plain, toasted, or with your favorite toppings!
