Creamy Tuscan Gnocchi Recipe

Ingredients

  • 1 pound uncooked potato gnocchi
  • 1 yellow onion chopped
  • 4 garlic cloves minced
  • 1 1/2 cups baby spinach
  • 2 tbsp butter
  • 1 1/4 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomato in oil
  • 1 tsp Italian seasoning
  • 1/2 cup fresh grated parmesan cheese
  • 2 tbsp fresh chopped basil/parsley
  • salt & pepper to taste

Instructions

  • Melt the butter in a large skillet over medium-high heat. Saute the chopped onion in the butter until tender, about 2 minutes. Then add the minced garlic and cook for 30 more seconds.
  • Add the gnocchi and sear in the flavored butter for one minute.
  • Stir in the sun-dried tomatoes, chicken broth, heavy cream, and Italian seasoning. Season with salt and pepper to taste.
  • Reduce the heat to medium, cover the pan, and let the mixture cook for 5 minutes.
  • Stir in the baby spinach and cook for an additional minute, or until the spinach is wilted.
  • Add the Parmesan cheese, and let the dish simmer for 2 more minutes. At this point, the gnocchi should be soft and thoroughly cooked, and the sauce should be thickened.
  • Remove the pan from the heat, garnish the dish with fresh basil or parsley, and serve hot.

Notes

Incorporate the dry, uncooked gnocchi directly into the sauce; it will cook perfectly in this mixture. As the gnocchi cooks, it releases starch which naturally helps to thicken the sauce.
