When mornings are busy but I still want something warm and homemade, this Ham and Cheese Croissant Breakfast Bake is what I reach for. It comes together quickly, uses simple ingredients, and feeds everyone in one go. Flaky croissants soak up a creamy egg mixture, while ham and cheese make it filling and comforting, exactly what a family breakfast should be.
Prep the croissants. Cut croissants into halves or thirds so you get lots of flaky edges. Set aside.
Make the custard. Whisk together eggs, milk or cream, salt, garlic salt, pepper, and rosemary in a bowl.
Dip. Quickly dunk each croissant piece into the egg mixture and shake off excess.
Arrange the croissants into a greased baking dish, packing them in nicely.
Add the fillings. Tuck slices of deli meat and cheese between the croissant pieces. Pour the remaining custard mixture over the croissants. Sprinkle shredded mozzarella over the top.
Bake. Bake at 350°F (175 °C) for 20 to 30 minutes, or until the cheese is melted and the croissants are lightly golden.
Make the honey butter. Stir together melted butter, honey, and fresh herbs.
Finish. Remove the croissant bake from the oven and baste generously with the honey butter herb sauce.
