Ingredients

  • 1 1/2 pounds potatoes
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • pinch of cayenne pepper
  • optional: rosemary, thyme, or garlic cloves

Instructions

  • Peel, wash, and quarter the potatoes. Place them on a microwave-safe plate and microwave for 3-4 minutes.
  • Microwave the potatoes until an inserted knife into the thickest part of the potato will go through with some resistance.
  • Let potatoes cool, then dice them into roughly 1/2-inch pieces.
  • Add the olive oil and butter to a large skillet over medium-high heat.
  • Add the diced potatoes to the skillet in a single layer. Season the potatoes with salt, pepper, smoked paprika, garlic powder, onion powder, and a pinch of cayenne pepper.
  • Cook the potatoes for about 10 minutes, flipping and tossing every 3 minutes to achieve even browning and crispiness.
  • Adjust to taste and serve immediately with your favorite toppings.

Notes

For an extra layer of aromatic goodness, you can toss in a garlic clove and a few sprigs of rosemary and thyme. This step is optional but highly recommended for added flavor.
