Ingredients and Substitutions

Here’s what goes into my favorite cheesy taco pasta recipe (and a few substitution ideas in case you’re missing something):

Ingredients for one-pot cheesy taco pasta: ground beef, shell pasta, tomato sauce and paste, shredded cheddar, cream cheese, beef broth, diced onion, minced garlic, butter, taco seasoning, salt and pepper.
  • Ground Beef – I like using extra lean ground beef because it keeps the dish lighter while still being full of flavor.
  • Onion – Adds a little sweetness and depth and helps build the base of the sauce.
  • Garlic Cloves – I always reach for fresh garlic here. It gives the best flavor.
  • Tomato Paste – A good quality tomato paste adds rich tomato flavor.
  • Taco Seasoning – You can use store bought taco seasoning for convenience, but I love using a homemade blend so I can adjust the spice level.
  • Pasta – Any short pasta like penne, rotini, or macaroni works well since it holds onto the sauce.
  • Beef Broth – I prefer low sodium beef broth so I can control the salt.
  • Tomato Sauce – This helps create a smooth, flavorful sauce that brings everything together.
  • Cream Cheese – Full fat cream cheese makes the sauce extra creamy and rich.
  • Cheddar Cheese – I always grate my own cheddar because it melts better and adds a sharper flavor.
  • Salt and Pepper – I season to taste and usually add a little extra at the end to make all the flavors pop.

How to Make Cheesy Taco Pasta – Step by Step

This easy ground beef taco pasta comes together in one pot with minimal prep. Here’s how:

1. Cook the Beef

Grab a large pot or Dutch oven. Brown the ground beef over medium heat, breaking it up as it cooks. Once it’s mostly browned, stir in the onion and garlic. Sauté until soft and fragrant (about 3-4 minutes).

2. Add Flavor

Stir in the tomato paste and taco seasoning. Let it cook for 1-2 minutes—it deepens the flavor and gets rid of the raw tomato taste.

3. Add Liquids & Pasta

Pour in the beef broth and tomato sauce, then stir in the uncooked pasta. Make sure the pasta is submerged. Bring it to a boil, then reduce to a simmer.

4. Simmer Until Tender

Cover the pot and let it simmer for about 14 minutes, stirring occasionally. The pasta should be tender, and most of the liquid absorbed.

5. Make It Cheesy

Turn off the heat. Stir in the cream cheese until melted and creamy. Then add the cheddar cheese, stirring until gooey and smooth. Taste and season with salt and pepper.

My Recipe Tips for the Best Cheesy Taco Pasta

  • Use short pasta that holds the sauce well. This is not the recipe for spaghetti.
  • Grate your own cheese if you can. It melts better and tastes fresher.
  • Take a little time to brown the beef properly. This adds so much flavor to the final dish.
  • Keep an eye on the pasta and check it a couple of minutes early so it does not overcook.
  • Feel free to add extras. Corn, bell peppers, or black beans are all great additions if you want to add veggies.

Storage and Reheating

I usually store leftovers in an airtight container in the fridge, and they keep well for up to 4 days.

This cheesy taco pasta reheats really well. I warm it on the stovetop or in the microwave, and I usually add a small splash of broth or water to loosen the sauce.

Sometimes I double the recipe and freeze half for later. I like freezing it in individual portions so it is easy to grab for busy days. Let it cool completely, then store it in freezer safe containers for up to 2 months. Thaw overnight in the fridge and reheat gently.

What Type Of Pasta Works Best For This Dish?

Short pasta shapes like penne, rotini, or macaroni are ideal as they hold the sauce well and cook evenly. Avoid long pasta like spaghetti, as it doesn’t mix as well with the creamy sauce.
